Swiss Country Days
A Big thanks to all that joined us for Swiss Country Days on August 19th. 
Our vendors all had a good day sampling their locally made products.
Swiss Improvement Organization (SIO) sold chances to guess the weight of a pig donated by Schneider Farms. Two individuals, Sandy Krull & Tony Fennewald both guessed the exact weight of 281 lbs. Proceeds went to benefit the SIO for the HFD Station #3 in Swiss. The Double S 4H Club had a fun time with games for the kids.
A  Whole Hog Plate Lunch & Homemade Vanilla Ice Cream was served by Swiss E&R Church in their Fellowship Hall and Betty Crawford filled the air with her beautiful voice. Many customers  purchased our in store specials and enjoyed a tour of our plant to see how our champion meats are all made here behind the scene. We all had a great time and can't wait till next year.

  Recipe of the Month 
Pork Chops Smothered with Bacon and Apples
 I love a good BBQ in the summer but fall has always been my favorite time of year. The cool crisp weather is perfect for some comfort food cooking. Chef Julie
Ingredients:
1 - 16 oz pk. Swiss Meats Apple Cinnamon Bacon, cut in 1/4 inch pieces. 
4 Swiss Meats center cut bone-in Pork Chops
Salt & Pepper to taste
1 cup chicken broth
1 med size sweet onion thin sliced 
2 apples cored and sliced
 

Instructions:

1.      Preheat oven to 350 degrees.

2.       Prepare the pork chops by heating a medium sized skillet over medium/high heat with a little oil. Season pork chops with salt and pepper and sear on both sides until golden brown.

3.      Transfer chops to a medium sized baking dish  add the chicken broth and put in preheated oven.

4.      Bake until a thermometer reads 145 degrees in the thickest part of the chop. (15 min )

5.      While the pork chops are in the oven cook bacon until crisp. Remove from pan and set aside, leaving bacon fat in pan.

6.       Peel the apples & onions and slice into thin ¼ inch slices. Cooking them in the same pan the bacon was cooking in until apples and onions have caramelized. Add cooked bacon bits.

7.      Serve by spooning caramelized apples and Bacon mixture over each chop, and any cooking liquid from the baking dish the chops were in.

 Great with Garlic Mashed Potatoes.

    You can feel in the air that deer season is near. Archery Season begins September 15th.
We will start accepting deer or deer trim at that time.
 
 A little History. Missouri’s deer management program has come a long way since 1944. That year, 7,557 hunters took 583 deer during a two-day, bucks-only season in 20 southern Missouri counties.
