  Recipe of the Month 
October is National Chili Month.
October is National Chili Month and every one has their favorite from Hot & Spicy to Sweet and Savory. There are so many ways to stir up a batch of chili.  In researching chili recipes  I came  upon some history and what could have been the first Chili recipe from Texas


Cut up as much meat as you think you will need (any kind will do, but beef is probably best) in pieces about the size of a pecan. Put it in a pot, along with some suet (enough so as the meat won't stick to the sides of the pot), and cook it with about the same amount of wild onions, garlic, oregano, and chilies as you have got meat. Put in some salt. Stir it from time to time and cook it until the meat is as tender as you think it's going to get.

Ingredients :
1 lb. Swiss Meats
  Flaming Hot Bratwurst
1 15 oz. can white beans
1 15 oz. can pinto beans
2 med. tomatoes, chopped
1/2 tomato juice cup
¾ tsp. cumin
2 Tbsp. cilantro, chopped

Shredded Cheddar Cheese
Tortilla Chips

 In a large saucepan, cook the Flaming Hot Bratwurst, turning frequently until browned on all sides. Remove the bratwurst and slice.  Add the white beans, pinto beans, tomatoes, tomato juice and cumin. Add the sliced bratwurst and bring to a boil, lower the heat and simmer 15 minutes. Stir in cilantro and serve with your choice of toppings.

Serves 4.
