 Turkey Facts:

A turkey hen will  lay about 10 to 12 eggs, one egg per day, over a period of about two weeks. The eggs will incubate for about 28 days before hatching.

Despite their weight, wild turkeys, unlike domesticated turkeys, are swift fliers. In ideal environment of open woodland, they may fly beneath the covering of tree tops and find a place to perch. They usually fly close to the ground for no more than a quarter mile. 

How to heat our Hickory Smoked Turkey.

Preheat oven to 225°.  Remove turkey from bag, place in pan breast side up.  Add 1/2 inch of water or chicken broth to pan (carrots, onion and celery wouldn't hurt a bit).  Cover and cook for 1 to 1 1/2 hours till the internal temperature is 165°.   Enjoy!

 Cranberry Orange Relish
This one is for my sister. The only thing is she will now know how easy it is to make.  I  take this tasty relish to  our family holiday meal.  It pairs well with Smoked Turkey and  will keep for several days in the  refrigerator until  the  guest arrive. 


1 unpeeled Navel Orange,

   cut into eights and seeded

1 12oz package  Cranberries

1  cup sugar 

2 Tbs. Lemon Juice 


Place half the cranberries and half the orange slices in food processor container or you can use a food grinder.  Process until mixture is evenly chopped. Transfer to a bowl. Repeat with remaining cranberries and orange slices. Stir in sugar and lemon juice. Store in refrigerator. 
Makes about 3 cups.
