Flipping the calendar to August, the Marcel’s cooking class calendar is filled with 16 reasons to Cook, Create, and Celebrate. Chef Coleen shares her secrets to getting the most of your groceries in Waste Not, Want Not (8/21) and you can see a sneak preview of this class on NBC5 Sunday August 19th at 8:15 am, and getting the most out of your garden in Preserving the Season (8/23).
 
Chef Jean is ensuring the perfect summer sidekick to your next barbeque with Salads and Slaws (8/8) , is putting summer’s juiciest fruits to work in From the Orchard (8/22) and offers her best tips for Instant Entertaining (8/25).   Lynn Dugan is keeping us healthy and energetic with 100% Natural, Vegan and Vegetarian (8/9) and Five Hour Energy, Healthy Snacks (8/15).  Chef Robin has the quickest, tastiest menu with Tomatoes in Ten (8/28).
 
Chef Kelly is pairing with DMK Burger Bar for Menu Favorites (8/14), and is husking some corn in Aw Shucks (8/17).  Guest Chef Pete Trusiak leads us on a Cross Country BBQ (8/24).
 
And finally, Chef Jamie has two mini-camps for kids on August 6 & 7 and again on August 13 & 14, has you rolling some Sushi in Sushi 101 (8/10). He shows us some food on a stick in Going to the Fair (8/16) and watch Jamie on ABC7 Sunday 8/5 at 8:15 am as he shows all of Chicagoland about his food on a stick specialties, and slathers butter on some fresh sweet corn in The Ears Have It (8/29).

ANUPY SINGLA VISITS MARCEL'S
 
 
On Saturday evening, July 21st , Marcel’s hosted Chicago’s very own, Anupy Singla for a book signing and cooking class. Featured was Anupy’s new book, "Vegan Indian Cooking". The book signing was free and open to the public and then immediately following the book signing, sixteen eager class registrants participated in a hands-on class conducted by Anupy, preparing recipes featured in “Vegan Indian Cooking” (pictured above). They all had a fabulous experience as Anupy (assisted by Chef Kelly Sears) took them through her simple, delicious, and unique dishes  And here's what Anupy herself had to say: "May I just say how impressed I am with Marcel's? I loved coming in as a guest chef/instructor. The store is impeccable. The staff is so happy to be there and so welcoming."  A wonderfully memorable evening was had by all!

A note from Jill

For many, after a summer with multiple days of record heat, not enough rain, and just enough stormy weather to make life difficult, August means back to school, football training camp, and thinking forward to fall.  I am one of those people who never wants summer to end - I love the heat, the open windows, the freedom to be indoors or out and of course the bounty of the garden.  This is the time when each meal can be spontaneous with what is fresh picked out of the back yard or picked up from the many farmer's markets that we are so fortunate to have access. 

Combine a grilled protein with your well stocked pantry and the tomatoes, beans, peppers, corn, lettuce, herbs, and other garden favorites and meals will become a cinch.  Need some ideas?  Look to the column at left for great classes that will teach you how to maximize all that is part of this season of freshness.

I am also looking forward to the Marcel's class calendar for October, November, and December that will be out on August 15th. Chef Kelly Sears and the rest of our amazing team have put together another unique and innovative set of classes for all ages and skill levels.  I'll send you an email when they are ready to see online.

Lastly, I am very excited to see Chef Jamie Bordoshuk on ABC7 on Sunday August 5th at 8:15 am talking about his upcoming 8/16 class on State Fair Food and Chef Coleen Graham on NBC5 on Sunday August 19th at 8:15 am talking about her upcoming 8/21 class entitled "Waste Not, Want Not" which features making homemade stocks and getting the most out of what's in your refrigerator.

CHEF TALK WITH JAMIE BORDOSHUK
America: Divided into regions, states, cities, towns and streets. And just about on every corner you will find some variation of street food. Although not typical gourmet fare, it involves some of the best aromas and flavors around.

We begin our day in New Orleans. It’s a steamy morning in the French Quarter, and we’re sipping chicory coffee and savoring warm Beignets at Café du Monde. These light puff pillows of sweet dough are dusted with so much powdered sugar that it seems to float in the air all around the outdoor café.

After a quick stroll through the Quarter, we find ourselves on Pier 39 in San Francisco, taking in the majestic Golden Gate Bridge and wondering what lunch has in store for us. After walking the pier, we decide on a sourdough bread bowl from the iconic Boudin Sourdough Bakery, filled with piping hot clam chowder and crumbled oyster crackers, the crusty crown leaning against the side.  

Satisfied with the best lunch on the west coast, we walk around and watch the street performers who seem to be everywhere on the wharf.   We turn our attention to “What’s for dinner?”, the three most popular words in every household.

“Lobster Rolls!” barks the guy at the window of Boston’s Five Island Lobster Shack. Along with a cob of sweet corn, a big dollop of slaw and melted butter running down our hands, we delve into our feast of the night. Our lobster roll wrapped in a newspaper cone is delivered only minutes after we order.

It’s been a full day of tasting America. And the saying is absolutely true. This country that we call home is truly one big melting pot.

New England Clam Chowder

Ingredients:

2 (10 oz) cans clams, with juice reserved
2 cups bottled clam juice
4 cups chicken broth
3 T butter
2 cups onions, small dice
2 cups celery, small dice
2 carrots, small dice
1 T garlic, minced
6 sprigs of thyme
2 bay leaves
3 cups potatoes, peeled and medium dice
2 cups heavy cream
Salt and Pepper

Procedure:

1.  In a dutch oven, over med heat, sauté onions,carrots and celery in butter, until translucent, about 6-7 minutes
2.  Add garlic, thyme, bay leaf, sauté for 1 minute more
3.  Add potatoes, chicken stock, reserved clam juice and bottled clam juice.
4.  Simmer until the potatoes are cooked about 20 minutes.
5.  Add clams and heavy cream and cook another 5 minutes.
6.   If soup is too watery, mash a few of the potatoes to thicken.
7.   Season with salt and pepper.

Just a year ago, my days were spent with Jill and the rest of our newly assembled team getting this wonderful store together. We used the then vacant apartment above the shop as our mini warehouse. One morning last August, Jill and I met with a woman named Janet Catlow and her assistant, Maggie. The company? Shine Handmade! Jill first saw these beautiful textiles at the One of a Kind Show and if you've visited Marcel's, I guarantee one of us has shown you these table toppers and runners! Designed and created by Janet in her St. Charles studio, each piece exhibits unique design and meticulous detail. She has years of experience in the textile arts including weaving, spinning, dyeing and construction which ultimately led her to producing her own line of these gorgeous table toppers and runners. Each piece we carry at Marcel's is one of a kind and numbered on its tag. The toppers are 52 x 52 inches and beautiful on any table - round, oval or rectangle. The runners come in two lengths, either 72" or 90" and each one is finished with a special embellishment selected just for that piece.

The options are limitless for decorating with Shine! At Marcel's, we love the look of a topper over a round tablecloth. Or, we've had fun using runners horizontally at the end of a table - a little different and very special!
